Are You Ready For Some Football!? Super Bowl Party

Even though I am not an NFL fan (college football is more my style) I love Super Bowl Sunday.  Nothing screams Americana more than getting together with friends and/or family, chowing down on some munchies, and watching football.  I love the excitement and the festivity of the evening.  From cheering on a favorite team, or watching the ridiculously over priced commercials to see which is your favorite, every bit of the evening is just good old fashioned American fun.

Today, I wanted to share with you our festive Super Bowl Party we attended last night.  Our host and hostess did a wonderful job of making sure the atmosphere was set from the time we walked in. 

How cute are these football field table clothes?  The room was decked out in football related décor, from our favorite college team to the football shaped plates and napkins.  It certainly made for a fun evening.

What was on the menu?
  • 3 types of chicken wings
  • Jalapeno Poppers
  • Cheese Dip
  • Monte Cristo Sliders
  • Pepperoni Pizza Pinwheels
  • Chicken Sliders
  • Sausage Balls
  • 7 layer Dip
  • Black Bean Dip
  • Spinach Dip
  • Green Bean Fries
  • Salsa
  • Tons of Chips
  • Cookies
  • Cupcakes
  • Cheesecake
  • Cream Puffs
And then they had the drink bar set up with tea, frozen margarita mix, Make-Your-Own Bloody Mary's, and water


Even if commercials and half time show stunk (who are we kidding, that's all I care about,) it was a great evening of fun, laughter, and food!
So, what did I conger up as a healthy side?  The Black Bean Dip.  It was fabulous and so easy to make. 

5-Minute Black Bean Dip

2 cans Reduced Sodium Black Beans
3/4 cup Salsa
2 tsp lime juice
1 tsp water
1 tsp cumin
Shredded Chedder Cheese  
1. Drain and rinse the black beans. 
2. Add the beans, salsa, lime juice, water and cumin to a food processor or blender and puree. 
3. Put into small baking dish and sprinkle with shredded cheese.
4. Bake at 350 degrees until cheese melts.
Serve with chips.
